125g [4oz] unsalted butter
1/2 teaspoon vanilla extract
1 cup brown sugar
1 egg [preferably free range or organic]
1 cup plain flour
1 cup self raising flour
1 cup desiccated coconut
250g [8oz] chopped chocolate of choice or small chocolate buttons
Preheat oven to 190 degrees C, [375 degrees F],
Place butter, sugar, vanilla in beat bowl, beat until creamy.
Add eggs, then stir through remaining ingredients.
Roll 2 tablespoon balls, flatten into cookie shape & place on paper lined tray.
Bake for 15 mins or until golden brown.
Cool on wire rack before eating.
Tip# Store remaining cookies in glass air-tight jar or cookie tin for freshness.
